Fun, incredibly simple, and delicious, this Peach Cobbler in a Jar is a little Southern classic! The tastiest dessert recipe ever is in this mason jar. A handmade Paleo cobbler topping is placed on top of a layer of delicious, juicy peaches, which is then baked to gooey, bubbling, golden perfection.

Ingredients

For the Peach Filling

  • 2 cups sliced peeled peaches (fresh or frozen)
  • 2 tablespoons maple syrup or agave nectar
  • 1 teaspoon cornstarch or arrowroot powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract

For the Cobbler Topping

  • 1/2 cup gluten-free rolled oats
  • 1/4 cup almond flour
  • 1/4 cup chopped nuts (such as pecans or walnuts)
  • 2 tablespoons coconut sugar or brown sugar
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons melted coconut oil or vegan butter
  • 1 tablespoon maple syrup

Instructions

Prepare the Peach Filling

  1. In a saucepan, combine the sliced peaches, maple syrup, cornstarch (or arrowroot), ground cinnamon, and vanilla extract.
  2. Cook over medium heat, stirring gently, until the mixture thickens and the peaches soften. Remove from heat and set aside.

Prepare the Cobbler Topping

  1. In a bowl, combine the gluten-free rolled oats, almond flour, chopped nuts, coconut sugar (or brown sugar), ground cinnamon, and a pinch of salt.
  2. Drizzle in the melted coconut oil (or vegan butter) and maple syrup. Mix until the mixture becomes crumbly and well combined.

Assemble the Cobbler in Jars

  1. Spoon the prepared peach filling into individual glass jars, leaving some space at the top.
  2. Sprinkle the cobbler topping evenly over the peach filling in each jar.

Bake the Cobbler

  1. Place the jars on a baking sheet to catch any potential drips.
  2. Bake in a preheated oven at 350°F (175°C) for about 20-25 minutes, or until the cobbler topping is golden brown and the peach filling is bubbling.

Serve

  1. Remove the jars from the oven and let them cool slightly before serving.
  2. Enjoy your Peach Cobbler in a Jar warm, and you can even top it with a scoop of dairy-free vanilla ice cream, if desired.
