Cookies, chocolate, and marshmallows are three foods that are not only delicious whenever they are together, but also rather addicting. Your first tiny smores taco will be on your dish in 15 minutes. The vegan marshmallows and cookies are available at Veganz.
Ingredients
For the Taco Shells
- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 3/4 cup almond milk (or any plant-based milk)
- 2 tablespoons vegetable oil
- Cooking spray
For the Filling
- Vegan marshmallows
- Vegan chocolate chips
- Crushed vegan graham crackers
For Garnish
- Vegan chocolate sauce
- Vegan whipped cream (made from coconut cream or aquafaba)
- Fresh berries (such as strawberries or raspberries)
Instructions
- In a mixing bowl, whisk together the flour, cocoa powder, sugar, and salt for the taco shells.
- Gradually add the almond milk and vegetable oil to the dry ingredients. Mix until the batter is smooth and well-combined.
- Preheat a non-stick skillet or griddle over medium heat. Lightly spray it with cooking spray.
- Pour approximately 1/4 cup of batter onto the skillet and spread it out into a thin, round shape using the back of a spoon. Cook for about 2-3 minutes or until the edges start to crisp. Flip and cook for another minute. Repeat with the remaining batter.
- Once the taco shells are ready, remove them from the heat and let them cool slightly.
- Fill each taco shell with a few vegan marshmallows, vegan chocolate chips, and crushed graham crackers.
- Optional: Place the filled tacos on a baking sheet and broil them in the oven for a minute or two until the marshmallows are slightly melted and golden brown.
- Remove the tacos from the oven and let them cool for a minute.
- Optional: Drizzle vegan chocolate sauce over the filled tacos and top with vegan whipped cream and fresh berries.
