Our tacos from June! You are aware that tacos need not necessarily be greasy and filling. We have made a tiny, incredibly straightforward summer taco for you so that you don’t forget to consume enough tacos over the summer. Because of the teriyaki sauce, the chicken is charred and incredibly meaty and salty. The peach adds sweetness to the slightly tart lime dip. What the summer tastes like is this!
Ingredients
- 8 small flour tortillas
- 2 cups vegan chicken strips, cooked and shredded
- 2 ripe peaches, thinly sliced
- 1 cup shredded lettuce
- 1/2 cup chopped cilantro
- 1/4 cup chopped red onion
- Lime wedges, for serving
For the Lime Yogurt Sauce
- 1 cup vegan yogurt
- 1 tablespoon lime juice
- 1 teaspoon lime zest
- Salt and pepper to taste
Instructions
- In a small bowl, mix together the ingredients for the Lime Yogurt Sauce. Season with salt and pepper to taste. Set aside.
- Warm the flour tortillas in a dry skillet over medium heat or in a microwave.
- Assemble the tacos by placing a small amount of shredded lettuce on each tortilla, followed by the cooked vegan chicken strips, sliced peaches, chopped cilantro, and red onion.
- Drizzle the Lime Yogurt Sauce over the taco fillings.
- Serve the tacos with lime wedges on the side.
