These vegan mint bounty bars are the perfect chocolate treat if you’re a vegan. In fact, I can guarantee that whether you’re vegan or not, as long as you like coconut, you’ll enjoy these!
Ingredients
- 1 cup shredded coconut
- 1/4 cup coconut cream
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 200 grams (7 ounces) dairy-free dark chocolate, melted
Instructions
- In a mixing bowl, combine the shredded coconut, coconut cream, maple syrup, vanilla extract, and salt. Mix well until all the ingredients are evenly combined.
- Line a baking sheet or tray with parchment paper.
- Take small portions of the coconut mixture and shape them into rectangular bars or bite-sized balls, placing them on the lined baking sheet.
- Place the baking sheet in the freezer for about 15-20 minutes to allow the bars to firm up.
- While the bars are chilling, melt the dark chocolate using a double boiler or microwave, stirring until smooth.
- Remove the coconut bars from the freezer and dip each one into the melted chocolate, ensuring they are fully coated. Use a fork to lift them out of the chocolate and tap off any excess.
- Place the chocolate-coated bars back onto the lined baking sheet and return them to the freezer for another 10-15 minutes to set.
- Once the chocolate has hardened, you can transfer the bars to an airtight container and store them in the refrigerator until ready to serve.
