The taco with sauerkraut is quickly prepared. Sauerkraut, sausages, and fried potatoes are all you need. served with a sweet mustard dressing that is vegan. Even though it’s not the prettiest taco ever, it tastes amazing. Potatoes and vegan sausages may be made with just a pan.
Ingredients
- 8 small corn tortillas
- 2 cups sauerkraut
- 1 cup shredded purple cabbage
- 1 small red onion, thinly sliced
- 1 small carrot, grated
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Sweet Mustard Dressing:
- 2 tablespoons Dijon mustard
- 2 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
- 1 tablespoon olive oil
Instructions
- In a mixing bowl, combine the sauerkraut, shredded cabbage, red onion, grated carrot, olive oil, apple cider vinegar, salt, and pepper. Toss well to combine. Let it sit for at least 10 minutes to marinate.
- In a separate small bowl, whisk together the Dijon mustard, maple syrup, apple cider vinegar, and olive oil until well combined. Set aside.
- Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until they become pliable.
- Assemble the tacos by placing a generous amount of the sauerkraut mixture on each tortilla. Drizzle with the sweet mustard dressing.
- Serve the tacos immediately and enjoy!
