Ingredients
For the filling:
- 1 cup sushi rice
- 2 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 avocado, sliced
- 1/2 cucumber, julienned
- 1/4 cup shredded carrots
- 1/4 cup chopped scallions
- 1/4 cup vegan mayonnaise
- 1 tablespoon Sriracha sauce (optional)
For the crispy coating:
- 1 cup all-purpose flour
- 1 cup bread crumbs
- 1 cup plant-based milk (such as almond or soy milk)
- Oil for frying
For serving:
- Nori seaweed sheets, cut into taco shell shapes
- Soy sauce or tamari, for dipping
- Pickled ginger and wasabi, for serving (optional)
Instructions
- Cook the sushi rice according to the package instructions. In a small bowl, mix the rice vinegar, sugar, and salt. Once the rice is cooked, transfer it to a large bowl and pour the vinegar mixture over it. Mix well to combine and let it cool.
- In a separate bowl, combine the shredded carrots, chopped scallions, vegan mayonnaise, and Sriracha sauce (if using). Mix well to make the spicy mayo sauce.
- Take a sheet of nori seaweed and cut it into a taco shell shape. Repeat with the remaining nori sheets.
- To assemble the sushi taco rolls, take a nori taco shell and spread a layer of sushi rice on the bottom. Add a few slices of avocado, some julienned cucumber, and a spoonful of the spicy mayo sauce. Roll the taco shell tightly and set it aside. Repeat with the remaining ingredients.
- In one bowl, place the all-purpose flour. In another bowl, pour the plant-based milk. In a third bowl, place the bread crumbs.
- Dip each sushi taco roll into the flour, then into the plant-based milk, and finally into the bread crumbs, making sure to coat them thoroughly.
- Heat oil in a deep pan or skillet over medium heat. Carefully place the coated sushi taco rolls into the hot oil and fry them until golden brown and crispy. Remove from the oil and place on a paper towel-lined plate to drain excess oil.
