Ingredients
- 3 cups rolled oats
- 1 cup mixed nuts (e.g., almonds, walnuts, cashews), chopped
- 1/2 cup unsweetened shredded coconut
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/4 cup unsweetened applesauce
- 1/4 cup maple syrup or agave nectar
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Optional: dried fruits (e.g., cranberries, raisins) for added sweetness
Instructions
- Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, mixed nuts, shredded coconut, pumpkin seeds, and sunflower seeds. Stir well to mix the ingredients evenly.
- In a separate bowl, whisk together the applesauce, maple syrup or agave nectar, melted coconut oil, vanilla extract, ground cinnamon, and salt.
- Pour the wet mixture over the dry ingredients and stir until everything is well coated.
- Spread the granola mixture evenly onto the prepared baking sheet.
- Bake for 20-25 minutes, stirring once or twice during cooking, until the granola is golden brown and crispy.
- Remove the baking sheet from the oven and allow the granola to cool completely. It will continue to crisp up as it cools.
- If desired, stir in dried fruits for added sweetness.
- Store the cooled granola in an airtight container at room temperature for up to 2 weeks.
