Ingredients:
- 1 lb. purple sweet potatoes
- 1 cup glutinous rice flour
- 1/4 cup sugar
- 1/4 cup hot water
- 1/4 cup cornstarch (for dusting)
- Water for boiling
Instructions:
- Peel the purple sweet potatoes and cut them into small pieces.
- Steam the sweet potato pieces for about 20 minutes or until they are soft.
- In a mixing bowl, mash the sweet potatoes and add sugar. Mix well.
- Add glutinous rice flour and mix until the dough is formed.
- Add hot water and knead the dough until it’s smooth.
- Dust a flat surface with cornstarch and roll the dough into small balls.
- Flatten each ball with your fingers and make a small dent in the center.
- Boil water in a pot and add the dumplings. Stir gently to avoid sticking.
- Cook for about 5 minutes or until the dumplings float to the surface.
- Remove the dumplings with a slotted spoon and serve hot.
