These wraps are really delicious and rank among my all-time favourite lentil foods! They are filling, comforting, and just a little bit fulfilling. One of the best recipes for reducing anxiety is this one. It is packed with protein, vegetables, complex carbohydrates, and good fats.
Ingredients:
- 1 cup cooked lentils
- 1/2 cup grated carrots
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 4 large tortillas
Instructions:
- In a large mixing bowl, combine the cooked lentils, grated carrots, chopped red onion, and fresh cilantro.
- In a small mixing bowl, whisk together the olive oil, lemon juice, ground cumin, paprika, salt, and pepper.
- Pour the dressing over the lentil mixture and toss until well coated.
- Divide the mixture evenly among the tortillas and wrap them tightly.
