Avocado halves serve as the bread for these burgers. They are a fun and low-carb way to serve burgers at your upcoming grilling party this summer.
Ingredients:
- 4 ripe but firm avocados
- 4 pineapple slices
- Vegan mayo
- Fresh cilantro
- Lettuce leaves
For the green patty:
- 1 can of chickpeas, drained and rinsed
- 1/2 cup of oats
- 1/4 cup of cilantro leaves
- 1/4 cup of parsley leaves
- 1/4 cup of chopped onion
- 2 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of salt
- 1/4 teaspoon of black pepper
For the toppings:
- Sliced red onion
- Sliced tomato
- Sliced avocado
Instructions:
- Start by making the green patty. In a food processor, pulse the chickpeas, oats, cilantro, parsley, onion, garlic, cumin, salt, and pepper until well combined. The mixture should be sticky and hold together.
- Divide the mixture into 4 equal portions and shape each into a patty.
- Heat a large skillet over medium-high heat. Add a little bit of oil and cook the patties for 3-4 minutes on each side until they are browned and crispy.
- Cut the avocados in half and remove the pit. Slice each half lengthwise into 3-4 slices.
- Grill the pineapple slices until they are charred and caramelized.
- To assemble the burgers, spread some vegan mayo on the bottom bun, add a lettuce leaf, a green patty, a slice of grilled pineapple, some sliced avocado, and a few sprigs of fresh cilantro. Top with the other bun.
- Serve the burgers with your favorite sides and enjoy!
