Ingredients:
- 1 (14-oz) can chickpeas/garbanzo beans, drained and rinsed
- 1⁄2 C cucumber, chopped
- 1⁄2 C cherry tomatoes, chopped
- 1⁄2 C yellow bell pepper, chopped
- 1⁄4 C kalamata olives, pitted and chopped
- 1 TB fresh oregano, chopped, or 1 tsp dried
- 1 TB fresh dill, chopped, or 1 tsp dried
- 1 TB red wine vinegar
- 2 tsp Dijon mustard
- 1 TB olive oil
- 1 tsp sea salt
- 1 tsp freshly ground pepper
- 3 C salad greens, washed and dried
Instructions:
1. In a small bowl, whisk together the red wine vinegar, Dijon mustard, olive oil, herbs, sea salt and pepper to make the dressing.
2. Place the salad greens in a large bowl and top with chickpeas/garbanzo beans and chopped vegetables. Drizzle the dressing over the top of the salad, taste, and add more seasoning if needed before serving.
