The tastiest rice crispy treats that are vegan are these! They have an identical flavour to the originals. They are chewy, soft, crunchy, and light because they are made with puffed rice cereal coated in vanilla marshmallows. To prepare them, you just need 4 ingredients and 30 minutes!
Ingredients
- 4 cups crispy rice cereal
- 1/2 cup brown rice syrup or maple syrup
- 1/4 cup coconut oil
- 1/4 cup almond butter or any other nut/seed butter
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Grease a 9×9-inch baking dish with coconut oil or line it with parchment paper.
- In a large mixing bowl, add the crispy rice cereal.
- In a small saucepan, combine the brown rice syrup (or maple syrup), coconut oil, almond butter, vanilla extract, and salt.
- Heat the saucepan over low heat, stirring continuously until the mixture is well combined and the coconut oil has melted.
- Pour the saucepan mixture over the crispy rice cereal in the mixing bowl. Stir gently until the cereal is evenly coated.
- Transfer the mixture to the greased or lined baking dish.
- Press the mixture firmly and evenly into the dish using the back of a spatula or your hands.
- Allow the treats to cool and set at room temperature for at least 1 hour.
- Once cooled and set, cut the mixture into squares or rectangles to form rice crispy treats.
