Ingredients
For the Apple Fritters
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3/4 cup unsweetened almond milk (or any non-dairy milk)
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 2 cups peeled and diced apples (about 2 medium-sized apples)
- Vegetable oil for frying
For the Glaze
- 1 cup powdered sugar
- 2 tablespoons unsweetened almond milk (or any non-dairy milk)
- 1/2 teaspoon vanilla extract
Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- Add the almond milk, applesauce, and vanilla extract to the dry ingredients. Stir until just combined.
- Fold in the diced apples until they are evenly distributed throughout the batter.
- Heat vegetable oil in a deep fryer or large pot to about 350°F (175°C).
- Using a spoon or cookie scoop, carefully drop spoonfuls of the batter into the hot oil. Fry for about 2-3 minutes on each side, or until golden brown.
- Remove the fritters from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- In a small bowl, whisk together the powdered sugar, almond milk, and vanilla extract to make the glaze.
- Dip each fritter into the glaze, coating both sides, and place them on a wire rack to allow the glaze to set.
- Serve the apple fritters warm.
