Cheesy Roasted Broad Beans

These vegan, oil-free, and protein-rich roasted broad beans are delicious! They are a crowd-pleasing cheese snack that you can serve at gatherings or use to top salads and soups because they are coated in delectable spices.

Ingredients

  • 2 cups broad beans (also known as fava beans), shelled
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup nutritional yeast (for the cheesy flavor)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the broad beans with olive oil, garlic powder, paprika, dried oregano, salt, and pepper until they are well coated.
  3. Spread the seasoned broad beans in a single layer on a baking sheet.
  4. Roast in the preheated oven for about 15-20 minutes, or until the beans are crispy and golden brown. Make sure to stir them once or twice during cooking to ensure even browning.
  5. Remove the roasted broad beans from the oven and let them cool for a few minutes.
  6. Transfer the beans to a clean bowl and sprinkle them with nutritional yeast. Toss gently to coat the beans with the cheesy flavor.
  7. Serve the Cheesy Roasted Broad Beans as a snack or appetizer.
