For us, nothing tops a snack: crunchy bread, vegetables, endless spreads, and toppings. In particular, we are fortunate to have so many excellent bakeries that we could easily eat bread all day long. But even the nicest bread in town with a mouthwatering spread might become monotonous after a while. To help you spice up your snack the next time, we’re going to share with you a simple yet lovely new concept today.
Ingredients
- 4 slices of whole grain bread
- 1 ripe avocado
- 1 cup of frozen peas, thawed
- 1 clove of garlic, minced
- 1 tablespoon of fresh lemon juice
- Salt and pepper to taste
- 4-6 radishes, thinly sliced
- 1 small red onion, thinly sliced
- 1 jalapeño pepper, seeds removed and minced
- Handful of fresh cilantro leaves, chopped
- Juice of 1 lime
Instructions
- In a food processor or blender, combine the avocado, thawed peas, minced garlic, lemon juice, salt, and pepper. Blend until smooth and creamy to make the peacamole.
- In a separate bowl, combine the sliced radishes, red onion, minced jalapeño pepper, chopped cilantro, and lime juice to make the radish salsa. Toss well to combine.
- Toast the slices of bread to your preference.
- Spread a generous amount of peacamole onto two slices of bread.
- Top the peacamole with a generous portion of radish salsa.
- Cover with the remaining slices of bread to complete the sandwich.
- Cut the sandwich in half or quarters, if desired, and serve.
