Vegan doner with a homemade whole grain flatbread, vegan Tzatziki sauce, and the traditional tomato, onion, white coleslaw, and red cabbage salad stuffing. You’ll find a terrific recipe here if you, like me, like or have eaten vegetable doner but would like to attempt a healthy variation on traditional doner.
Ingredients
- 2 large eggplants, sliced into rounds
- 2 large zucchinis, sliced into rounds
- 2 large red bell peppers, sliced into strips
- 1 large red onion, sliced into thin rings
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon paprika
- Salt and pepper to taste
Homemade Flatbread Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon olive oil
- 3/4 cup warm water
Toppings and Sauces (optional):
- Tzatziki sauce
- Hummus
- Fresh salad ingredients (lettuce, tomatoes, cucumbers, etc.)
Instructions
- Preheat your grill or oven to medium-high heat.
- In a large bowl, combine the sliced eggplants, zucchinis, red bell peppers, and red onion. Drizzle with olive oil and sprinkle with ground cumin, ground coriander, paprika, salt, and pepper. Toss until the vegetables are evenly coated with the spices and oil.
- Grill the vegetable slices until they are tender and slightly charred. This usually takes about 10-15 minutes, but cooking time may vary depending on your grill or oven.
- While the vegetables are grilling, prepare the flatbread dough. In a mixing bowl, combine the all-purpose flour, baking powder, and salt. Add the olive oil and warm water, and mix until the dough comes together.
- Transfer the dough to a lightly floured surface and knead for about 5 minutes until it becomes smooth and elastic. Divide the dough into 6 equal-sized balls.
- Roll out each dough ball into a thin round shape, approximately 6-8 inches in diameter.
- Heat a non-stick skillet or griddle over medium-high heat. Cook each flatbread for about 1-2 minutes on each side until it puffs up and gets golden brown spots. Remove from the heat and cover with a clean kitchen towel to keep them soft and warm.
- Assemble your vegetable doner by placing a generous amount of grilled vegetables on top of each flatbread. Add your desired toppings and sauces, such as tzatziki sauce, hummus, and fresh salad ingredients.
