Ingredients
- 1 cup vegan chocolate chips or chopped dark chocolate (check for vegan labeling)
- 1/4 cup coconut cream (the thick, creamy part from a can of full-fat coconut milk)
- 2 tablespoons maple syrup or agave nectar
- 1/2 teaspoon vanilla extract
- Optional: crushed nuts, dried fruits, or other fillings of your choice
Instructions
- In a heatproof bowl, add the vegan chocolate chips or chopped dark chocolate.
- In a small saucepan, heat the coconut cream over low heat until it starts to simmer. Remove from heat.
- Pour the hot coconut cream over the chocolate and let it sit for a minute or two to melt the chocolate.
- Gently whisk the chocolate and coconut cream mixture until smooth and well combined.
- Stir in the maple syrup or agave nectar and vanilla extract until fully incorporated.
- Let the mixture cool to room temperature, then cover the bowl and refrigerate for at least 2 hours or until firm.
- Once chilled and firm, use a spoon or a small cookie scoop to shape the mixture into egg-shaped balls.
- If desired, create a small well in the center of each egg with your thumb or the back of a spoon.
- Fill the well with crushed nuts, dried fruits, or any other fillings of your choice.
- Place the filled eggs back in the refrigerator to set for another 30 minutes to 1 hour.
- Once set, remove from the refrigerator and serve your vegan homemade spoon eggs chilled.
