The small rolls are filling as an appetiser, meal, or snack. And since I use pre-made yufka dough in my easy Turkish borek recipe, they’re equally simple to make. a fantastic substitution for “German” puff pastries with feta and spinach!
Ingredients
For the Filling
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 cups fresh spinach, roughly chopped
- Salt and pepper to taste
For the Börek
- 12 sheets of phyllo pastry
- 1/4 cup melted vegan butter or olive oil for brushing
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
- Add the chopped spinach to the skillet and cook until wilted. Season with salt and pepper to taste. Remove from heat and let the filling cool.
- Place one sheet of phyllo pastry on a clean surface and brush it with melted vegan butter or olive oil. Place another sheet on top and repeat the process until you have a stack of 4 phyllo sheets.
- Cut the stacked phyllo sheets into 4 equal strips.
- Place a spoonful of the spinach filling at the bottom corner of one strip. Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly like a cigar.
- Repeat the process with the remaining phyllo sheets and filling.
- Place the rolled börek on the prepared baking sheet and brush the tops with melted vegan butter or olive oil.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
- Serve the vegan cigar börek warm as an appetizer or snack.
