This recipe might look a little funny, but it tastes great, and is a good way to get a protein and veggie packed breakfast!
Ingredients:
• 2 eggs
• 1 C fresh spinach or baby kale, rinsed and dried
• 1 small clove garlic
• 1⁄2 tsp sea salt
• 1 TB olive or avocado oil
Directions:
- Combine the first four ingredients in a blender and blend until combined.
- Place oil in a small skillet and swirl to coat the skillet. Heat over medium, and then add the egg mixture once hot. Cook for 3-4 minutes; turning eggs frequently, until they are just set.
- Taste and adjust seasonings, then serve.
- For extra green, serve with a slice of whole-grain avocado toast!
