Ingredients:
- 8 oz pasta (preferably whole wheat)
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1/4 cup harissa paste
- 1/2 cup tomato sauce
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley for garnish
Directions:
- Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water before draining.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
- Add the harissa paste and tomato sauce to the skillet and stir to combine. Cook for 1-2 minutes, until heated through.
- Add the cooked pasta to the skillet and toss to coat in the harissa sauce. If the sauce is too thick, add some of the reserved pasta water to thin it out.
