Fresh Blueberry Salsa

This Fresh Blueberry Salsa can be made in 15 minutes! It tastes good on all three levels! Serve it over fish, chicken, or pork, or with tortilla chips.

Fresh Blueberry Salsa

Ingredients

  • 1 cup fresh blueberries, washed and chopped
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper (any color you prefer)
  • 1 jalapeño pepper, seeds removed and finely diced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or maple syrup (adjust to taste)
  • Salt to taste

Instructions

  1. In a mixing bowl, combine the chopped blueberries, diced red onion, diced bell pepper, diced jalapeño, and chopped cilantro.
  2. Drizzle the fresh lime juice and honey (or maple syrup) over the mixture.
  3. Gently toss the ingredients together until everything is well combined.
  4. Taste the salsa and add salt as needed to balance the flavors.
  5. Allow the salsa to sit for about 15-20 minutes before serving. This allows the flavors to meld together.
  6. Serve the blueberry salsa with tortilla chips, as a topping for grilled proteins, or as a side dish.
