We can’t think of a better way to celebrate the upcoming holidays than with some extremely decadent, reassuring eggnog. A creamy, holiday drink known as eggnog is often made with eggs, milk, sugar, nutmeg, and whisky.
Ingredients
- 2 cups unsweetened almond milk
- 1/4 cup pure maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves (optional)
- 1/4 cup raw cashews, soaked overnight and drained
- 2 tablespoons unsweetened almond butter
- Optional: a splash of rum or rum extract (for flavor)
Instructions
- In a blender, combine almond milk, maple syrup, vanilla extract, cinnamon, nutmeg, cloves (if using), soaked cashews, and almond butter.
- Blend until smooth and creamy.
- Taste and adjust the sweetness or spices according to your preference.
- If desired, add a splash of rum or rum extract and blend again.
- Transfer the mixture to a container and refrigerate for at least 1 hour to chill and allow the flavors to meld.
- Before serving, give it a good stir. You can garnish with a sprinkle of ground cinnamon or nutmeg, if desired.
- Pour into glasses and enjoy your vegan eggnog!
