These vegan gyros are quick, simple, and delectable: roasted cauliflower seasoned with Greek spices, topped with creamy dairy-free tzatziki, and fresh crisp veggies wrapped in warm flatbread. Make the tzatziki and cut the vegetables as the cauliflower marinates so all you have to do when it’s time to serve is roast the cauliflower.
Ingredients
For the cauliflower filling
- 1 medium head of cauliflower, cut into small florets
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground paprika
- 1/2 teaspoon ground coriander
- Salt and pepper to taste
For the vegan tzatziki sauce
- 1 cup vegan yogurt (such as almond or soy yogurt)
- 1/2 cucumber, grated and squeezed to remove excess moisture
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
For assembling
- Whole-grain or whole-wheat pita bread or flatbreads
- Sliced tomatoes
- Sliced red onions
- Fresh lettuce or spinach leaves
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cauliflower florets with olive oil, ground cumin, paprika, ground coriander, salt, and pepper until well coated.
- Spread the seasoned cauliflower evenly on a baking sheet and roast in the preheated oven for about 20-25 minutes or until the cauliflower is tender and slightly crispy.
- While the cauliflower is roasting, prepare the vegan tzatziki sauce. In a bowl, combine vegan yogurt, grated cucumber, minced garlic, fresh lemon juice, chopped dill, salt, and pepper. Mix well and refrigerate until ready to use.
- Warm the pita bread or flatbreads in the oven for a few minutes.
- To assemble the gyros, spread a generous spoonful of tzatziki sauce on each pita bread. Add roasted cauliflower, sliced tomatoes, sliced red onions, and fresh lettuce or spinach.
- Roll up the pita bread tightly, securing the contents, and serve immediately.
