A delightfully delicate and moist cake with a surprising ingredient: spinach! Cardamom gives this cake its fragrant flavour, and it is delightful!
For the cake
- 2 cups fresh spinach leaves
- 1 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cardamom
- 1/2 cup unsweetened applesauce
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup almond milk (or any plant-based milk)
- 1 tsp apple cider vinegar
For the frosting
- 1 cup vegan butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
- 1-2 tbsp plant-based milk (as needed)
- Preheat your oven to 350°F (175°C).
- Grease and flour two 8-inch round cake pans.
- In a blender or food processor, puree the fresh spinach leaves until smooth. You may need to add a little water to help with blending.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cardamom.
- In a separate bowl, combine the applesauce, vegetable oil, vanilla extract, almond milk, and apple cider vinegar.
- Pour the wet mixture into the dry mixture and mix until well combined.
- Stir in the spinach puree until the batter turns green and is evenly mixed.
- Divide the cake batter evenly between the prepared cake pans.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cakes from the oven and let them cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
- In a large mixing bowl, beat the softened vegan butter until creamy.
- Gradually add the powdered sugar and vanilla extract, and continue to beat until well combined. If the frosting is too thick, add plant-based milk, one tablespoon at a time, until you reach your desired consistency.
- Once the cakes are completely cool, spread a layer of frosting on top of one of the cakes.
- Place the second cake on top and frost the top and sides of the entire cake.
- You can decorate the cake with additional cardamom, edible flowers, or other vegan cake decorations of your choice.
