They are excellent for hiking or whenever you need a quick energy boost and are gluten-free, paleo, and vegan.
Ingredients
- 1 cup dried apricots, soaked in warm water for 15 minutes and drained
- 1/2 cup pitted dates
- 1/2 cup raw cashews
- 1/2 cup shredded coconut, plus extra for coating
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt (optional)
Instructions
- In a food processor, combine the soaked and drained apricots, pitted dates, raw cashews, shredded coconut, vanilla extract, and salt (if using).
- Pulse the mixture until it forms a sticky, uniform dough-like consistency. You may need to scrape down the sides of the food processor and pulse again to ensure everything is well combined.
- Scoop out portions of the mixture and roll them into bite-sized balls.
- Roll the balls in shredded coconut to coat them evenly.
- Place the apricot balls on a tray or plate and refrigerate for about 30 minutes to firm them up.
- Once chilled, the apricot balls are ready to serve. Store any leftovers in an airtight container in the refrigerator.
