Ingredients
For the macaron shells
- 1 cup almond flour
- 3/4 cup powdered sugar
- 1/4 cup aquafaba (chickpea brine)
- 1/4 cup granulated sugar
- 1 teaspoon instant coffee powder
- 1/2 teaspoon vanilla extract
- Pinch of cream of tartar
For the coffee buttercream filling
- 1/2 cup vegan butter, softened
- 1 cup powdered sugar
- 1 teaspoon instant coffee powder
- 1-2 tablespoons plant-based milk (as needed)
Instructions
Macaron Shells
- In a food processor, blend the almond flour, powdered sugar, and instant coffee powder until well combined. Sift the mixture into a large mixing bowl to remove any lumps. Set aside.
- In a separate mixing bowl, add the aquafaba and cream of tartar. Using an electric mixer, whip the aquafaba until stiff peaks form.
- Gradually add the granulated sugar to the whipped aquafaba, continuing to mix until you get a glossy and thick meringue.
- Gently fold the almond flour mixture into the meringue using a spatula. Be careful not to overmix.
- Transfer the macaron batter into a piping bag fitted with a round tip. Pipe small circles onto a parchment-lined baking sheet. Let the piped macarons sit at room temperature for about 30 minutes to form a skin.
- Preheat your oven to 300°F (150°C). Bake the macarons for 18-20 minutes or until they have developed feet and are set. Allow them to cool completely before removing from the baking sheet.
Coffee Buttercream Filling
- In a bowl, whisk together the vegan butter, powdered sugar, and instant coffee powder until smooth and creamy. If the buttercream is too thick, add plant-based milk, one tablespoon at a time, until you reach the desired consistency.
- Transfer the coffee buttercream into a piping bag.
Assembling the Macarons
- Match similar-sized macaron shells in pairs.
- Pipe a dollop of coffee buttercream onto one shell and top with another shell to create a sandwich.
- Gently press the shells together to spread the filling evenly.
