Dates stuffed with pistachios are a popular Middle Eastern treat that consists of fresh dates that have been pitted and stuffed with a mixture of finely chopped pistachios and other ingredients. Ingredients
- 12 medjool dates
- 1/2 cup creme fraiche (or mascarpone, yogurt cheese, or goat cheese)
- A small handful of fresh wild rose petals ( or sub 1/2 cup pomegrante seeds)
- 1/2 cup pistachios (or almonds or nut of choice)
- Pinch of salt and pepper
- Light dusting of cardamon
Instructions
- Dates should be pitted and then carefully split in half using your fingers. Before putting them on a serving dish, open them up to better hold the contents.
- Dates should be filled with creme fraiche placed in a pastry bag or on a spoon. Add a few pistachios or any other nuts you want to the filling. A few rose petals or pomegranate seeds can be tucked inside the date with the help of a toothpick or another pointed kitchen tool.
- Salt and pepper should be added, along with a small amount of cardamon.
- Alternatively, mint leaves and lemon zest can be used as garnish.
