Vegan Spreads Made From Sunflower Seeds

A nut-free version of the traditional Spanish sauce, this romesco is made with red peppers and sunflower seeds. It is sweet, smokey, and flavorful.

Ingredients

  • 2 cups raw sunflower seeds
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons nutritional yeast
  • 1 clove garlic, minced
  • Salt to taste
  • Water (for desired consistency)

Instructions

  1. In a food processor or blender, add the sunflower seeds and blend until they form a coarse meal.
  2. Add the olive oil, lemon juice, nutritional yeast, minced garlic, and a pinch of salt. Blend again until well combined.
  3. Gradually add water, 1 tablespoon at a time, while blending, until you reach your desired consistency. The amount of water needed may vary.
  4. Taste and adjust the salt and lemon juice if necessary.
  5. Transfer the spread to a jar or airtight container and refrigerate for at least an hour to allow the flavors to meld together.
  6. Serve the sunflower seed spread on bread, crackers, or use it as a dip or spread in sandwiches and wraps.
