Vegan Eggnog

We can’t think of a better way to celebrate the upcoming holidays than with some extremely decadent, reassuring eggnog. A creamy, holiday drink known as eggnog is often made with eggs, milk, sugar, nutmeg, and whisky.

Ingredients

  • 2 cups unsweetened almond milk
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves (optional)
  • 1/4 cup raw cashews, soaked overnight and drained
  • 2 tablespoons unsweetened almond butter
  • Optional: a splash of rum or rum extract (for flavor)

Instructions

  1. In a blender, combine almond milk, maple syrup, vanilla extract, cinnamon, nutmeg, cloves (if using), soaked cashews, and almond butter.
  2. Blend until smooth and creamy.
  3. Taste and adjust the sweetness or spices according to your preference.
  4. If desired, add a splash of rum or rum extract and blend again.
  5. Transfer the mixture to a container and refrigerate for at least 1 hour to chill and allow the flavors to meld.
  6. Before serving, give it a good stir. You can garnish with a sprinkle of ground cinnamon or nutmeg, if desired.
  7. Pour into glasses and enjoy your vegan eggnog!
