Vegan Manakish with Zatar

The famous savoury flatbread breakfast delicacy known as Manakeesh Zaatar (also known as manaeesh, mana’ish, or manaqish) is popular in Lebanon. In essence, it is a deliciously light handmade dough topped with za’atar.

Ingredients

  • 1 pound (450g) of pizza dough, homemade or store-bought
  • 2 tablespoons of olive oil
  • 3 tablespoons of Za’atar spice blend
  • 1/4 teaspoon of salt

Instructions

  1. Preheat the oven to 425°F (218°C).
  2. On a floured surface, roll out the pizza dough into a 1/4 inch (0.6cm) thick rectangle.
  3. Place the dough onto a baking sheet or pizza stone.
  4. Drizzle the olive oil over the top of the dough and spread it out evenly.
  5. Sprinkle the Za’atar spice blend and salt evenly over the top of the olive oil.
  6. Bake the manakish in the preheated oven for 10-15 minutes, or until the crust is golden brown and the za’atar is fragrant.
  7. Slice into triangles and serve warm.
