Vegan Lasagna Recipe

You may also form these tasty and healthful kofta into patties the size of falafels and bake them in the same manner. Vegan koftas enhance the grill with a mouthwatering array of tastes, including Middle Eastern-inspired flavours like cumin, coriander, and cardamom.

Ingredients:

  • 1 box of lasagna noodles
  • 1 jar of vegan tomato sauce (24 oz)
  • 1 can of crushed tomatoes (28 oz)
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup of sliced mushrooms
  • 1 package of vegan ground beef (12 oz)
  • 1 package of vegan mozzarella cheese (8 oz)
  • 1/2 cup of nutritional yeast
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. Cook the lasagna noodles according to package instructions, then set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté for 2-3 minutes until fragrant.
  4. Add the diced red bell pepper, zucchini, and sliced mushrooms to the skillet and cook for 5-7 minutes until they are tender.
  5. Add the vegan ground beef to the skillet and cook for 5-7 minutes until it is heated through.
  6. Add the crushed tomatoes and tomato sauce to the skillet and stir to combine. Season with salt and pepper to taste.
  7. In a separate bowl, mix together the vegan mozzarella cheese and nutritional yeast.
  8. To assemble the lasagna, spread a layer of the tomato sauce mixture on the bottom of a 9×13 inch baking dish. Add a layer of lasagna noodles, then a layer of the cheese mixture. Repeat the layers until all of the ingredients are used up.
  9. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
