Vegan Focaccia With Tomatoes & Basil

A warm, spongy Italian bread made with fresh tomatoes, olives, flavorful basil, garlic, herbs, and melted cheese is called tomato basil focaccia. This focaccia is a tasty delicacy that is just waiting for you to indulge, made simply but with results that rival those of a fine restaurant.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 1-2 tomatoes, thinly sliced
  • Fresh basil leaves
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine the flour, instant yeast, salt, and sugar.
  2. Gradually add warm water and olive oil to the dry ingredients, mixing well until a dough forms.
  3. Transfer the dough to a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Preheat your oven to 425°F (220°C).
  6. Punch down the risen dough and transfer it to a greased baking sheet. Gently press and stretch the dough to fit the baking sheet.
  7. Arrange the tomato slices and basil leaves on top of the dough. Drizzle with olive oil and sprinkle with salt and pepper.
  8. Bake the focaccia in the preheated oven for about 20-25 minutes or until golden brown.
  9. Once done, remove from the oven and let it cool for a few minutes before slicing and serving.
