Vegan Berry Tartlets

Once you’ve created this tart, you’ll want to reach around and give yourself a pat on the back since it resembles the focal point of a posh bakery window with its buttery crust, rich pastry cream filling, and vibrant berries. The secret is to simply brush warmed jam or jelly on top of the berries to give it (and any other fruit treat) a professional appearance.

Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup coconut oil, melted
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 cup mixed fresh berries (such as strawberries, blueberries, raspberries)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and vanilla extract. Stir well until the mixture forms a dough.
  3. Take small portions of the dough and press them into the bottoms and up the sides of mini tartlet pans, forming a crust.
  4. Place the tartlet pans on a baking sheet and bake in the preheated oven for about 10-12 minutes, or until the crust turns golden brown.
  5. Remove the tartlet pans from the oven and let them cool completely.
  6. Once the tartlet crusts have cooled, carefully remove them from the pans.
  7. Fill each tartlet with a mixture of fresh berries.
  8. Garnish with fresh mint leaves if desired.
  9. Serve and enjoy!
