Vegan Air Fryer Squash

Crispy and delicious Squash in the vegan air fryer is ideal as a side dish or an appetiser! These slices have a flavorful, cheesy, crunchy breading that makes them absolutely delectable. These quick appetisers may be prepared in the air fryer (or oven) in a matter of minutes using basic ingredients.

Ingredients

  • 2 medium-sized squash (e.g., zucchini or yellow squash)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Wash and slice the squash into even rounds, about 1/4 to 1/2 inch thick.
  3. In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
  4. Add the sliced squash to the bowl and toss to coat the squash evenly with the seasoned olive oil mixture.
  5. Place the squash slices in a single layer in the air fryer basket, making sure they are not overcrowded. You may need to cook them in batches.
  6. Cook the squash in the air fryer for about 8-10 minutes, flipping them halfway through, until they are tender and lightly browned.
  7. Remove the squash from the air fryer, and serve hot. Optionally, you can garnish with fresh herbs like parsley or a sprinkle of nutritional yeast for added flavor.
