Tortellini In Vegan Ham And Cream Sauce

This Ham and Cheese Tortellini dish is sure to become a family favourite! It’s topped with cheese-filled tortellini and topped with gammon, peas, and a creamy sauce. It’s simple to make and quite delicious!

Ingredients

For the vegan ham

  • 1 cup vital wheat gluten (seitan)
  • 1/4 cup nutritional yeast
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1 cup vegetable broth

For the cream sauce

  • 1 cup raw cashews, soaked in water for at least 2 hours or overnight
  • 1 1/2 cups vegetable broth
  • 2 cloves garlic
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

For the tortellini

  • Vegan tortellini (store-bought or homemade)
  • Fresh parsley for garnish

Instructions

For the vegan ham

  1. In a mixing bowl, combine the vital wheat gluten, nutritional yeast, smoked paprika, garlic powder, onion powder, and ground black pepper.
  2. In a separate bowl, mix the soy sauce, tomato paste, and vegetable broth.
  3. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  4. Knead the dough for a few minutes to develop the gluten.
  5. Shape the dough into a log and wrap it tightly in aluminum foil.
  6. Steam the wrapped dough for about 1 hour. Let it cool, and then slice it into thin ham-like slices.

For the cream sauce

  1. Drain the soaked cashews and rinse them well.
  2. In a blender, combine the soaked cashews, vegetable broth, garlic, nutritional yeast, lemon juice, salt, and pepper.
  3. Blend until you achieve a smooth and creamy consistency. Adjust the seasoning to taste.

For the tortellini

Cook the vegan tortellini according to the package instructions until they are al dente. Drain and set aside.

Assembling the dish

  1. In a large skillet, heat a little oil over medium heat.
  2. Add the sliced vegan ham to the skillet and cook until slightly crispy.
  3. Lower the heat and add the cream sauce to the skillet. Stir well to combine with the ham.
  4. Add the cooked tortellini to the skillet and toss everything together until the tortellini is coated with the creamy sauce.
  5. Cook for a few more minutes until everything is heated through.
  6. Serve the Vegan Tortellini in Ham and Cream Sauce hot, garnished with fresh parsley.
