Spicy Tofu Burritos

These spicy tofu burritos are easy to prepare, taste-adaptable, and fantastic for quick weeknight meals and meal-prepping! keep a large quantity of these in freezer to bake for incredibly quick (and healthy!) meals.

Ingredients:

  • 1 tablespoon olive oil
  • 1 block (14 ounces) extra-firm tofu, drained and crumbled
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 4 whole wheat tortillas
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add crumbled tofu, salt, pepper, chili powder, cumin, paprika, and cayenne pepper. Cook, stirring occasionally, for 5-7 minutes or until tofu is lightly browned.
  2. Add diced red bell pepper and red onion to the skillet. Cook for an additional 3-4 minutes, or until vegetables are tender.
  3. Add black beans to the skillet and stir to combine. Cook until beans are heated through, about 2-3 minutes.
  4. Warm tortillas in the microwave or on a griddle. Divide the tofu mixture evenly among the tortillas.
  5. Top each burrito with sliced avocado, chopped cilantro, and a squeeze of lime juice.
