Spicy Corn Fritters with Cilantro Cream Recipe

Easy to make and tasty, this recipe for spicy corn fritters with jalapenos, coriander, lime zest and cheddar may be served as an appetiser or vegetarian main dish.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 1/4 tsp paprika
  • 1 egg
  • 1/2 cup milk
  • 1 tbsp olive oil
  • 1 cup canned corn, drained
  • 1/4 cup chopped scallions
  • 1/4 cup chopped cilantro
  • Vegetable oil, for frying
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • 1 tsp lime juice
  • Salt, to taste

Instructions:

  1. In a large bowl, whisk together flour, cornmeal, baking powder, salt, cayenne pepper, and paprika.
  2. In a separate bowl, beat the egg, milk, and olive oil together. Add the wet ingredients to the dry ingredients and mix until just combined.
  3. Fold in the canned corn, scallions, and cilantro.
  4. In a large skillet, heat vegetable oil over medium-high heat.
  5. Using a spoon or cookie scoop, drop spoonfuls of batter into the hot oil. Cook for 2-3 minutes on each side, until golden brown.
  6. Remove the fritters from the oil and place on a paper towel-lined plate to cool.
  7. To make the cilantro cream, mix together sour cream, cilantro, lime juice, and salt in a small bowl.
  8. Serve the fritters warm with the cilantro cream on the side.
