Potato Hash Pancakes

There are only few ingredients needed for this easy recipe for crispy potato hash pancakes. It is a hash brown-inspired dish that served with some homemade marinara sauce for a filling snack. Perfect as a hearty snack or for breakfast!

Ingredients:

  • 2 large potatoes, peeled and grated (about 2 cups)
  • 1/2 onion, grated
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions:

  1. In a large mixing bowl, combine grated potatoes and grated onion.
  2. Add beaten eggs, flour, baking powder, salt, and black pepper. Mix well.
  3. Heat olive oil in a large nonstick skillet over medium-high heat.
  4. Using a 1/4 cup measuring cup, scoop potato mixture into skillet, flattening each pancake with a spatula.
  5. Cook for 3-4 minutes on each side, until golden brown and crispy.
  6. Repeat until all potato mixture is used, adding more olive oil to the skillet as needed.
  7. Serve hot and enjoy!
