Pomegranate Clusters

Antioxidants are abundant, and the flavour is unrivalled. Additionally, it pairs well with chocolate. My most recent pomegranate recipe is these salted dark chocolate pomegranate clusters, and they are AMAZING.

Ingredients

  • 1 cup pomegranate seeds
  • 1 cup raw almonds
  • 1 cup rolled oats
  • 1/4 cup honey
  • 1/4 cup coconut oil
  • 1/4 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, pulse the almonds until they are coarsely chopped.
  3. In a mixing bowl, combine the almonds, oats, cinnamon, and salt.
  4. In a small saucepan, melt the honey and coconut oil together over low heat.
  5. Pour the melted honey and coconut oil over the oat and almond mixture and stir well to combine.
  6. Fold in the pomegranate seeds.
  7. Line a baking sheet with parchment paper.
  8. Use a tablespoon to scoop the mixture and form clusters on the prepared baking sheet.
  9. Bake for 12-15 minutes or until the clusters are golden brown.
  10. Remove from the oven and allow to cool completely before serving.
