Healthy Ferrero Rocher

The homemade version of Ferrero Rocher has a whole roasted hazelnut in the centre, a wonderful, creamy hazelnut filling all around, and is then wrapped in chocolate and crunchy hazelnut bits.

Ingredients:

  • 1 cup hazelnuts
  • 1/4 cup cocoa powder
  • 1/4 cup honey
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • Dark chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (180°C).
  2. Spread the hazelnuts out on a baking sheet and roast them in the oven for 10-12 minutes, or until they are fragrant and lightly browned.
  3. Once the hazelnuts have cooled, transfer them to a food processor and pulse until they are finely ground.
  4. Add the cocoa powder, honey, coconut oil, vanilla extract, and salt to the food processor and continue to pulse until everything is well combined.
  5. If the mixture is too dry, add more coconut oil.
  6. Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
  7. Chill the balls in the refrigerator for at least 30 minutes.
  8. Optional: melt some dark chocolate chips in the microwave or using a double boiler, and dip the balls in the melted chocolate.
  9. Chill the balls again until the chocolate has hardened.
  10. Serve and enjoy!
