These grilled beets have a delicious caramelised flavour and are delightfully tender. Add pesto on top for outrageously wonderful results. Perfect as a side dish or as a topping for bowls, salads, and toast.
Ingredients:
- 4 medium beets, scrubbed and trimmed
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1/4 cup prepared pesto
- 1/4 cup chopped fresh parsley
Instructions:
- Preheat grill to medium-high heat.
- Cut the beets into 1/4-inch thick slices and place them in a bowl.
- Drizzle the olive oil over the beets and season with salt and pepper.
- Toss to coat.
- Grill the beets for 3-4 minutes per side or until tender and grill marks appear.
- Remove the beets from the grill and place them on a serving platter.
- Drizzle the pesto over the beets and sprinkle with chopped parsley.
- Serve warm or at room temperature.
