Carrot Lentil Wrap

These wraps are really delicious and rank among my all-time favourite lentil foods! They are filling, comforting, and just a little bit fulfilling. One of the best recipes for reducing anxiety is this one. It is packed with protein, vegetables, complex carbohydrates, and good fats.

Ingredients:

  • 1 cup cooked lentils
  • 1/2 cup grated carrots
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 4 large tortillas

Instructions:

  1. In a large mixing bowl, combine the cooked lentils, grated carrots, chopped red onion, and fresh cilantro.
  2. In a small mixing bowl, whisk together the olive oil, lemon juice, ground cumin, paprika, salt, and pepper.
  3. Pour the dressing over the lentil mixture and toss until well coated.
  4. Divide the mixture evenly among the tortillas and wrap them tightly.
