Carrot Crunch Pita Recipe

Get the kids involved in the preparation of this easy, healthy meal and you can be sure that everyone will have empty plates.

Ingredients:

  • 1 large carrot, grated
  • 1/2 cup of cabbage, thinly sliced
  • 1/4 cup of hummus
  • 2 tablespoons of Greek yogurt
  • 1 tablespoon of lemon juice
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 1 whole wheat pita pocket, cut in half

Instructions:

  1. In a bowl, mix together the grated carrot and sliced cabbage.
  2. In a separate bowl, mix together the hummus, Greek yogurt, lemon juice, olive oil, salt, and pepper.
  3. Add the hummus mixture to the carrot and cabbage mixture and stir until well combined.
  4. Fill the pita pocket halves with the carrot and cabbage mixture.
