Baked Vegan Blueberry Donuts

The baked blueberry doughnuts are every berry and doughnut lover’s ideal treat. Make a batch of them to enjoy as a dessert, breakfast, or as a snack. Our eyes gleam at the farmers market when berry season arrives! Row after row of fresh blueberries—the headline ingredient in today’s recipe—and strawberries makes our hearts just sing.

Ingredients

For the Donuts

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar or coconut sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened almond milk (or any plant-based milk)
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons melted coconut oil or vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh blueberries

For the Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons plant-based milk
  • 1/2 teaspoon vanilla extract

Instructions

Preheat and Prepare

  1. Preheat your oven to 350°F (175°C).
  2. Grease a donut pan with a little oil or non-stick cooking spray.

Prepare the Donut Batter

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, combine the almond milk, applesauce, melted coconut oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Gently fold in the fresh blueberries.

Fill the Donut Pan

  1. Spoon the batter into a piping bag or a zip-top bag with the corner snipped off.
  2. Pipe the batter evenly into the prepared donut pan, filling each cavity about 2/3 full.

Bake

Bake the donuts in the preheated oven for 12-15 minutes or until they are lightly golden and a toothpick inserted into a donut comes out clean.

Glaze the Donuts:

  1. In a bowl, whisk together the powdered sugar, plant-based milk, and vanilla extract until you have a smooth glaze.
  2. Once the donuts are slightly cooled but still warm, dip each donut into the glaze, allowing any excess to drip off.

Serve

Place the glazed donuts on a wire rack to set. The glaze will firm up as it cools.
