Coconut Kiwi Popsicles

Kiwi slices floating among a sea of coconut chia pudding. Kiwi coconut chia popsicles are a satisfying breakfast treat or anytime snack.

Ingredients:

  • 1 cup coconut cream
  • 3 tbsp sugar
  • ½ tsp vanilla extract
  • 2 kiwis, chopped
  • 1 pinch sea salt
  • 4 tbsp poppy seeds
  • Pomegranate seeds to serve, (optional)
  • Kiwi slices, to serve (optional)

Instructions:

  • Take an ice cold bowl and pour in the coconut cream.
  • Use an electric beater and beat for 5 minutes.
  • Add in the sugar, vanilla extract and salt.
  • Beat for another 4 minutes.
  • Stir in the chopped kiwis and the poppy seeds.
  • Fold in using a spatula.
  • Pour the mixture into an ice cream tray.
  • Tuck in the popsicles sticks.
  • Add in the freezer and freeze for 4 hours.
  • You can serve as it is or add pomegranate seeds and fresh kiwi slices on top.
