Vegan Currywurst

Want a spicy, indulgent comfort food that’s the perfect accompaniment to a stein of bier? Try currywurst, which serves as a core component of any good night out in Germany.

Ingredients:

  • 4 vegan sausages
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup ketchup
  • 1/2 cup vegetable broth
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup

Instructions:

  1. Preheat oven to 375°F. Place the vegan sausages on a baking sheet and bake for 15-20 minutes, or until browned and heated through.
  2. Meanwhile, heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the curry powder, paprika, cayenne pepper, black pepper, and salt to the skillet and stir to combine.
  4. Add the ketchup, vegetable broth, apple cider vinegar, and maple syrup to the skillet and stir to combine. Bring the sauce to a simmer and cook for 5-10 minutes, or until slightly thickened.
  5. Serve the vegan sausages topped with the currywurst sauce.
