Black Bean and Corn Quesadilla

This is a flavorful and satisfying dish that celebrates the rich tapestry of Mexican-inspired flavors. This delightful recipe showcases a medley of wholesome ingredients, including black beans, sweet corn, vibrant bell peppers, and the perfect blend of spices. Wrapped in a warm whole wheat or corn tortilla and lightly crisped to perfection, these quesadillas are not only a feast for the taste buds but also a wholesome, meatless option for those seeking a delicious and nutritious meal. Get ready to indulge in the goodness of fresh veggies and melted cheese, bringing a fiesta of flavors to your table!

Ingredients:

For the Filling:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional for spice)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and black pepper to taste
  • 1 cup shredded Mexican cheese blend

For the Quesadillas:

  • 4 large whole wheat or corn tortillas
  • Cooking spray or a small amount of oil for cooking

For Serving:

  • Salsa, guacamole, or sour cream (optional)

Instructions:

  1. In a large mixing bowl, combine black beans, corn, bell pepper, red onion, jalapeño (if using), cumin, chili powder, salt, and black pepper. Mix well.
  2. Heat a non-stick skillet over medium heat.
  3. Place one tortilla in the skillet, and on one half of the tortilla, spread a generous layer of the black bean and corn mixture.
  4. Sprinkle a portion of the shredded Mexican cheese over the filling.
  5. Fold the other half of the tortilla over the filling, creating a half-moon shape.
  6. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  7. Repeat the process for the remaining tortillas.
  8. Once cooked, remove from the skillet and let them cool for a minute before slicing each quesadilla into wedges.
  9. Serve the quesadillas warm, optionally with salsa, guacamole, or sour cream on the side.
