A Sheet Pan Portobello Mushroom Fajita Dinner That Is Healthy, Delicious, and Simple To Prepare. A few spices, toppings, and seven ingredients. In less than 30 minutes, dinner is ready.

Ingredients

For the Fajita Seasoning

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (adjust to taste for spiciness)
  • Salt and black pepper to taste

For the Sheet Pan Fajitas

  • 4 large portobello mushroom caps, sliced
  • 2 bell peppers (any color), thinly sliced
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 8 small corn tortillas (use gluten-free if needed)
  • Optional toppings: avocado slices, vegan sour cream, salsa, chopped cilantro, and lime wedges

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix together all the fajita seasoning ingredients (chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper). Set aside.
  3. In a large mixing bowl, combine the sliced portobello mushrooms, bell peppers, and red onion.
  4. Drizzle with olive oil and lime juice, then sprinkle with the fajita seasoning.
  5. Toss to coat the vegetables evenly with the seasoning mixture.
  6. Spread the seasoned vegetables evenly on a baking sheet or sheet pan lined with parchment paper.
  7. Roast the vegetables in the preheated oven for 20-25 minutes or until they are tender and slightly caramelized, stirring once halfway through.
  8. While the vegetables are roasting, warm the corn tortillas in the oven for a few minutes or wrap them in foil and heat in the oven for the last 5 minutes of roasting.
  9. Serve the roasted portobello mushroom, pepper, and onion mixture in warm corn tortillas.
  10. Top with your favorite optional toppings, such as avocado slices, vegan sour cream, salsa, chopped cilantro, and a squeeze of lime juice.

  • Calories: 200-250 calories per serving (one serving includes 2 fajitas).
  • Protein: About 5-7 grams.
  • Fat: 6-8 grams (mainly from olive oil and avocado, if used).

  • Vitamins and Minerals: These fajitas are rich in vitamins and minerals, including vitamin C, potassium, and various antioxidants.
