Vegan Pecan Pie

This vegan pecan pie is incredible! No one would ever believe that it is dairy and egg free because it is so sweet, creamy, and nearly caramelly. a gluten-free selection. This pie is really amazing in terms of both flavour and texture. With a very slight bourbon (optional but so nice) flavour, it has a flavour that is almost caramel-like. Undoubtedly, the pie is quite delicious, and a modest piece will more than suffice.

Ingredients

For the Crust

  • 1 1/4 cups all-purpose flour
  • 1/2 cup vegan butter (cold and cubed)
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 3-4 tablespoons ice-cold water

For the Filling

  • 1 1/2 cups pecan halves
  • 1 cup full-fat coconut milk (from a can)
  • 3/4 cup brown sugar, packed
  • 1/4 cup maple syrup
  • 2 tablespoons cornstarch
  • 2 tablespoons vegan butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

For the Crust

  1. In a food processor, combine the all-purpose flour, vegan butter, granulated sugar, and salt. Pulse until the mixture resembles coarse crumbs.
  2. Add 1 tablespoon of ice-cold water at a time and pulse until the dough starts to come together.
  3. Turn the dough out onto a lightly floured surface and shape it into a disc. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
  4. Preheat your oven to 350°F (175°C).

For the Filling

  1. In a bowl, whisk together the coconut milk, brown sugar, maple syrup, cornstarch, melted vegan butter, vanilla extract, ground cinnamon, and salt until well combined.
  2. Stir in the pecan halves until they are evenly coated with the filling mixture.

Assembling and Baking

  1. On a floured surface, roll out the chilled dough into a circle large enough to fit a 9-inch pie dish.
  2. Gently transfer the rolled-out dough to the pie dish, trim any excess, and crimp the edges.
  3. Pour the pecan filling into the pie crust, spreading it out evenly.
  4. Place the pie on a baking sheet to catch any spills and bake in the preheated oven for about 45-50 minutes, or until the filling is set and the crust is golden brown.
  5. Once baked, remove the pie from the oven and let it cool completely before serving.

Optional Serving Tip: Serve the Vegan Pecan Pie with a scoop of dairy-free vanilla ice cream or a dollop of coconut whipped cream for an extra treat!
