Vegan Oat Bars

With only a few common ingredients, these quick vegan oat bars may be produced in just 30 minutes. They are naturally gluten-free and make a wonderful handmade treat, breakfast, or snack for the entire family.

Ingredients

  • 2 cups rolled oats
  • 1 cup mashed bananas (about 2 medium-sized bananas)
  • 1/4 cup almond butter or any nut butter of your choice
  • 1/4 cup maple syrup or any other liquid sweetener
  • 1/4 cup unsweetened applesauce
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional add-ins: chopped nuts, dried fruits, chocolate chips, etc.

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, mashed bananas, almond butter, maple syrup, applesauce, vanilla extract, ground cinnamon, and salt. Stir well to thoroughly combine.
  3. If desired, add any optional add-ins like chopped nuts, dried fruits, or chocolate chips. Mix until evenly distributed.
  4. Pour the mixture into the lined baking dish and spread it out evenly, pressing it down firmly.
  5. Bake for 20-25 minutes or until the edges turn golden brown.
  6. Remove from the oven and allow the oat bars to cool completely in the baking dish.
  7. Once cooled, lift the bars out of the dish using the parchment paper and cut them into desired sizes.
  8. Store the oat bars in an airtight container at room temperature for up to 5 days.
